Kachumburi - Super Salad.

Get your hands on this Fast, Delicious and Nutritious Super Salad.  Kachumburi is the Swahili name for Salad. 

Ingredients

  • Red & green capsicum chopped
  • Celery chopped
  • 2 cans Corn kernels
  • 2 cans of 5 Beans mix,
  • 2 Cans of black beans
  • Chopped Shallots- half bunch,
  • Handful Sun dried tomatoes (drained and rinsed) 
  • 500g fresh Green beans chopped 
  • Salad dressed with balsamic vinegar

Method. 
Drain and rinse all of your canned beans and corn and add together in a large air tight container. Chop all other veggies to similar sizes and combine with your beans and corn. Place the lid on the air tight container and shake all ingredients around until they are combined evenly- this is the fun part. Food is digested and eaten easier when chopped small so this salad appeals to many people. It is filling, delicious, quick and nutritious.  You can enjoy this with any first class protein like fish, chicken or steak. It's also a great meal for vegetarians to get their hands on to help increase their calorie and protein intake. Time to make: 5-10 minutes Meals for days!
