What came first? The chicken or the egg recipe!

1 cup of broccoli.

Big handful of spinach.

1 zuccinni.

8 eggs.

Vegata (brand) Chicken seasoning (or your seasoning of choice).

1 large cooked chicken breast diced (roasted, poached or pan fried).


Pre heat oven to 200 degrees.

Line baking tray with baking paper.

Chop the broccoli, spinach and zuccinni into small pieces.

Beat the eggs and then add salt and seasoning to the egg mix.

Dice the cooked chicken breast

Mix all ingredients together into a large bowl.

Pour the mixture into the baking tray and spread it out so it is even.

Bake in the oven for 30 minutes or until it is golden brown on the top.

Once it is cooked and cooled down, you can portion it into squares for easy meal options.

Optional: You may like to add cheese on top before baking.

Serve with your choice of vegetables and healthy fats as a nutritious meal for anytime of the day.
